Ingredients

  • 2 avocados
  • 4 tbsp Sana hummus
  • 5 thin slices of bacon
  • 1 teaspoon butter
  • 2 eggs
  • 2 tbsp milk
  • 1/4 cup black beans
  • parsley for decoration

 

Preparation

Heat the oven to 180ºC. Cut each avocado down the middle and remove the pit. Squash each avocado half with a fork a little bit and add 1 spoonful of Sana hummus to each. Set them aside for now.

 

Place bacon on a baking tray covered with baking paper (or foil) and bake in the oven at 180 ºC for 20 minutes or until it becomes crunchy. Take the bacon out of the oven and place it on a plate covered with paper towels to soak the excess fat.

Break eggs into a bowl and add milk. Mix well. Add butter to a non-stick pan until it melts and add the eggs mixture to the pan. Scramble the eggs using a wooden spoon. Add black beans to the mixture at the end of cooking.

 

Add eggs and black beans to the avocado halves with hummus. After the bacon cools down, break it and place it on top of avocado halves and decorate with fresh parsley. Yum! Bon appetite!
