• 1 small tortilla
  • 1/4 teaspoon olive oil
  • 4 tbsp hummus
  • 3 cups baby spinach
  • 1 teaspoon water
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 30 g grated cheddar cheese
  • 1 large egg, prepared to your taste



Heat oven to 200° C. Brush oil on one side of the tortilla and place it (oiled side down) on the baking tray; uniformly spread hummus on top of the tortilla.


Add spinach, water, salt and pepper to a cooking pan and bring to medium heat. Cook for one minute stirring constantly, until the water evaporates and spinach loosens. Remove the spinach from the cooking pan and onto a tortilla on a baking tray, and sprinkle cheese on top of everything.


Bake in the oven until the cheese is melted, and the tortilla becomes completely warm, about 8 minutes. Finally, prepare an egg to your taste (scrambled, boiled, sunny side up, etc.) Place the egg on top of the tortilla and serve. Bon appetite!
