Ingredients for chestnut and macadamia nuts falafel

  • 200 g chilled chestnuts
  • 100 g macadamia nuts
  • herbs of choice
  • 3 cloves garlic
  • 4 chopped young scallions
  • 1 tbsp curry
  • 1 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 teaspoon ginger
  • salt, pepper
  • 1 teaspoon baking soda
  • 2 tbsp whole wheat flour (for glutinous falafel)
  • poppy seeds

 

Ingredients for sweet potato pommes frites:

  • 2 sweet potatoes
  • 1 tbsp olive oil
  • 2 cloves of garlic (pasteurized)
  • 1 tbsp agave syrup
  • salt, pepper
  • 1 tbsp curry or Harissa paste
  • Sana hummus for dip

 

Preparation

Heat the oven to 200° C. Place a sheet of baking paper on each of two baking trays. Peel and slice sweet potatoes as frites and season them with spices, oil and agave syrup. Bake the sweet potatoes on baking trays for about 45 minutes, stirring them occasionally.

 

Mix together chestnuts, macadamia nuts, herbs, flour, baking soda, and spices in a mixer until you get a consistent dough texture. Place poppy seeds in a separate small bowl.

 

Take a spoon of dough from the mixer and roll it into poppy seeeds in order to form small falafel balls. Use all the dough and poppy to make falafels and bake them for about 25 minutes. Rotate the falafel balls several times so that they are baked evenly. Serve the sweet potatoes with falafels and Sana hummus. Bon appetite!
