Ingredients

  • 1 tbsp butter or olive oil
  • 1/2 red onion, chopped
  • 1 tortilla (large)
  • 1/4 cup Sana Hummus
  • 1 roasted red pepper, sliced
  • 3 canned artichokes, cut in halves
  • 2 cups mixed green salad leaves
  • 1 tbsp balsamic vinegar
  • 1/4 cup feta cheese, crushed

 

Preparation

Put butter in a medium heated pan. Add chopped red onion and cook slowly for 10-15 minutes, stirring occasionally until it softens and becomes golden brown. Set the pan aside to cool slightly.

 

Put a tortilla in a medium heated grill pan for 1 minute, or until you see the grill pan marks on the tortilla. (If you do not have a grill pan, use a regular one.) The tortilla should be soft and supple with a little bit of color. Set the tortilla aside to cool slightly as well.

In order to fill the tortilla, start by spreading hummus on one third of the tortilla, down the middle. Lay the fried slices of onion and grilled pepper on the spread hummus. Add artichoke halves.

 

Add balsamic vinegar to green salad leaves, mix well together and then add to the tortilla. Finally, sprinkle crushed feta cheese over the green salad. Carefully roll the tortilla, and squeeze the ends inwards. Cut the tortilla in half and share it with a friend. Bon appetite!
