• 1.5 kg white potatoes
  • 3 tbsp butter
  • 2 cups hummus
  • 1/2 teaspoon salt (or more, if preferred)
  • 1/4 teaspoon freshly ground black pepper
  • garnish per choice: fresh chopped parsley, lemon slices, olive oil, etc.

Peel potatoes and cut them into large pieces, about the same size. Place them in a large pot and fill with water to cover the potatoes.

After the water boils on high heat, lower the heat and simmer potatoes for another 20 to 30 minutes, or until they become soft.

Remove the pot from stove and drain the water. Mash the potatoes until they become smooth and add butter, hummus, salt and pepper. Mix the ingredients well. If necessary, add more pepper or salt. Add garnish of your choice. Bon appetite!
