Ingredients

  • 200 g fresh tofu
  • 1 small onion
  • 1 scallion
  • 5 cherry tomatoes
  • avocado halves
  • 2 tbsp olive oil
  • 1 tbsp food yeast
  • 1 tbsp curry powder
  • 1 teaspoon curcuma powder
  • salt and pepper
  • alfalfa sprouts for decoration

 

Preparation:

Rinse tofu, cut it to thin pieces and add to a bowl together with yeast, curry, curcuma, a pinch of salt, and pepper. Mix all the ingredients well.

Finely chop an onion and add to a heated pan with some olive oil until it becomes golden. Add tofu mix and cook for about 5-10 minutes (until tofu turns golden). Finally, add one chopped scallion and cherry tomatoes, mix, and serve everything on bread slices with avocado and alfalfa sprouts.

Note: In case you want your tofu scramble to taste more like scrambled eggs, add a pinch of black salt called “Kala Namak”. This salt has a characteristic sulfuric scent similar to hardboiled eggs.
